Cachaça 51, the most drunk in all of Brazil, has been produced for over forty years by the historic and very famous Pirassununga distillery, a famous company which, alone, produces more than 350,000 tons of sugar cane in its 4,000 hectares of land per year. It can be enjoyed neat, alternating it with orange slices but it is simply perfect for preparing Caipirinhas.
The distillate is rough, very difficult to drink straight and finds admirers only when it is used in fruit-based cocktails such as the famous Brazilian batidas. The reason for this roughness is to be found in the raw material, a molasses from which almost all the available sugar has been removed by centrifuge. Obtained from the distillation of sugar cane, Cachaça could be considered, to all intents and purposes, a rum, with only one substantial difference that separates it from the latter: the total absence of sugar. This, in fact, is completely centrifuged away from the molasses during processing, making it a liqueur that is too dry and hard to enjoy straight but simply perfect for mixing with other drinks in the creation of very famous and inimitable cocktails such as the Caipirinha. Colorless and crystalline, it denotes delicate and ethereal floral, fruity and spicy aromas, with vague references to tea notes. Warm and dry on the palate, with a strong flavor and beautiful spicy persistence on the finish.
