I Pastini , the winery located in the heart of the Valle d'Itria land, the land of the trulli, strives to maintain the wisdom of traditions even with modern winemaking techniques, thus managing to obtain the best that Apulian oenology knows to produce. “Pastinum” in Latin it was properly "hoe" and, derivatively, "land intended for the vine". Thus the hoe shaped the "cacalupo", the small earthen dam necessary to collect God's water, in this thirsty Apulia, then as now. Placing "the pastino", in this valley with a sweet profile, is an ancient and difficult art: planting "the vines" in the stone like saplings of Verdeca, Bianco d'Alessano and Minutolo and waiting for brother sun to slowly ripen them, it is the fruit of ancient experience.
