PUTEUS Salice Salentino DOP Reserve of the Mocavero Winery it is produced from grapes coming from vineyards located in the municipalities in which it falls PDO Salice Salentino in Puglia . THE vineyards they are located at Salice Salentino, Veglie and Guagnano (Lecce), San Pancrazio Salentino and San Donaci (Brindisi) and in the territories of the municipalities of Salentina fields (Le) And Cellino San Marco (Br) .
The soils are clay-limestone and the vineyards are grown with typical traditional Salento methodology of the Alberello Pugliese. PUTEUS is composed of 80% Negroamaro and 20% Malvasia Nera di Lecce grapes . The grapes are harvested by hand in the second ten days of September which is followed by the classic red vinification. During this last phase, the contact time between pomace and must is prolonged so as to allow greater extraction of colouring, aromatic and tannic substances. This is to ensure that the wine is well structured for aging. Subsequently, the pomace separates from the liquid part (wine must). This is paired in stainless steel tanks to complete the fermentation process. Once fermentation is complete, the wine is separated from the lees and stored in steel tanks for the first year. PUTEUS completes its cycle aging in oak barrels . Finally, it is stabilized, filtered and bottled.
PUTEUS Salice Salentino DOP Reserve It has an intense red color with fleeting violet reflections. Balanced tannins with spicy hints, rich and harmonious in the mouth.
