In San Marzano the winemakers take care of their small vineyard as they do a garden. Their stories are many, as are the names of their families. We chose one, Talò, to thank them ideally: family by family, story by story.
Area:San Marzano, Salento, Puglia. About 100 meters above sea level.
Ground:Medium clayey texture, shallow and with good presence of skeleton.
Cultivation:Espalier (4,500 vines per hectare).
Harvest:First half of September.
Winemaking:Thermo-controlled maceration of approximately 10 days followed by alcoholic fermentation with selected yeasts.
Refinement:In French oak barriques for 6 months.
Organoleptic characteristics:Very intense ruby red color with garnet streaks; rich aroma of ripe red fruit, cherries, berries, some hints of cinnamon. A wine with a remarkable structure, enriched by a velvety tannic texture, it lasts for a long time with a pleasant finish on the palate.
Pairings:Robust first courses, red meats and game, hard cheeses.
