Grape varieties: Red berry typical of Salento.
Area: San Marzano, Salento, Puglia. About 100 meters above sea level.
Ground: Medium clayey texture, shallow and with good presence of skeleton.
Cultivation: Espalier (4,500 vines per hectare).
Harvest: Second half of September.
Winemaking: Thermo-controlled maceration of approximately 10 days followed by alcoholic fermentation with selected yeasts.
Refinement: In steel.
Organoleptic characteristics: Intense ruby ​​red color with violet reflections: complex and broad aroma with notes of red fruit; wine with good structure, balanced and fresh.
Pairings: Cold cuts, robust first courses, risottos, light meat dishes.
Serve at: 16-18°C.
