Valpolicella Ripasso Superiore from the Santa Sofia winery is a wine soft, versatile and incredibly pleasant red produced in Marano di Valpolicella, Fumane and San Pietro in Cariano, in the province of Verona, in Veneto. This label is obtained from a blend of Corvina, Corvinone, mainly, and Rondinella grapes, coming from vineyards grown with the traditional Guyot method on rolling hills, exposed to the south-east, at an altitude between 150 and 260 meters . The land, which enjoys excellent ventilation and drainage, is characterized by medium-textured calcareous soils. The cellar, surrounded by a Palladian villa of undisputed beauty, is owned by the Begnoni family who purchased it in the sixties and today promotes various initiatives as the privileged custodian of this wonderful place.

Ripasso Superiore della Valpolicella is produced with carefully selected grapes harvested between the first and third ten days of September. The bunches, taken to the cellar, are subjected to soft destemming and pressing before carrying out the alcoholic fermentation in stainless steel containers, at a controlled temperature of 26-28 °C, with maceration on the skins for approximately 10 days. Subsequently the wine undergoes a second review on the skins, this time of Amarone, for about 3 days, and then remains in refinement in large 50 hectoliter oak barrels for 9 months , before being bottled and put on the market.

The Valpolicella Ripasso Superiore di Santa Sofia presents itself at the sight of a bright ruby ​​red color. Intense aromas of ripe fruit appear on the nose, including black cherry in alcohol and dehydrated plum, floral notes of dried flowers, spicy hints of liquorice, cinnamon and cloves, finishing with a hint of undergrowth. In the mouth it is enveloping, concentrated and soft, characterized by a silky and velvety tannic texture and a pleasant freshness.
