In San Marzano viticulture has a thousand-year history, which can be seen in its older vineyards, rich in centuries-old clones. From this precious heritage of sapling vineyards over sixty years old, a wine is born, which is the most beautiful story of our territory.
Area:Very old vineyards selected in the municipalities of San Marzano (TA) and Sava (TA).
Ground:Residual red soil with fine texture with calcareous substrate, sparse rocky outcrops and intense presence of iron oxides.
Cultivation:Saplings at least sixty years old (5,000 per hectare).
Harvest:Second half of September.
Winemaking:The grapes, in an advanced state of ripeness, are harvested manually. Maceration takes place for 18 days on 80% of the mass and for 25 days on 20%, with indigenous yeasts selected in the vineyard. Fermentation takes place at a controlled temperature of 24-26 °C.
Refinement:In French and American oak barriques for 12 months.
Organoleptic characteristics:Very intense and elegant ruby red color; broad and complex bouquet, fruity, with hints of plums, cherry jam and notes of tobacco, slightly spicy; wine with great body, soft and rich in noble tannins, with a finish that gives notes of cocoa, coffee and vanilla.
Pairings:Robust first courses, red meats and game. Meditation wine.
