In San Marzano the winemakers take care of their small vineyard as they do a garden.
Their stories are many, as are the names of their families.
We chose one, Talò, to thank them ideally: family by family, story by story.

Color: White
Grape variety: Chardonnay
Area: San Marzano, Salento, Puglia. About 100 m above sea level. The area is characterized by a dry microclimate with good water retention.
Ground: Shallow depths, medium texture.
Cultivation: Guyot (4,000 vines per hectare)
Harvest: Second ten days of August.
Winemaking: The destemmed grapes are kept in contact with the skins for a few hours in the cold before pressing, so as to extract the maximum floral potential while preserving the bouquet and natural aromatic profile of the grapes. Fermentation takes place in steel at 15°C for 13-15 days.
Refinement: In French oak barriques for 4 months.
Aging capacity: A wine that manages to keep its organoleptic characteristics intact for 3 years.
Organoleptic characteristics: Color: straw yellow; Fragrance: white flowers and tropical fruits, with vanilla notes; Palate: elegant, fresh and mineral.
Pairings: Fish first courses and appetizers. Excellent with cheeses.
Serve at: To be served at 12-14°C.
