Sea breezes chase each other among the rows of vineyards. They elicit light dances of wild flowers and stars. They whisper stories of the Mediterranean and give aromas to this fresh and mineral wine.
AWARDS AND RECOGNITIONS BY YEAR
Grape variety: Fiano.
Area: Hilly area north of the province of Taranto.
Ground: Medium clayey texture, shallow and with good presence of skeleton.
Cultivation: Espalier (4,000 vines per hectare).
Harvest: Last week of August.
Winemaking: Cryomaceration in the press for 6-8 hours; subsequent soft pressing of the pomace; cold static decantation and alcoholic fermentation at 11 °C.
Refinement: In steel.
Organoleptic characteristics: Pale straw color with bright green reflections; opens to the sense of smell with fragrant floral notes combined with hints of fresh exotic fruit; it envelops the palate with a decisive softness supported by a harmonious flavor and a good acidity.
Pairings: Ideal for seafood cuisine: mixed appetizers, raw shellfish, first courses with pink fish sauces.
Serve at: 12-14°C.
