In San Marzano the winemakers take care of their small vineyard as they do a garden. Their stories are many, as are the names of their families. We chose one, Talò, to thank them ideally: family by family, story by story.
Area:San Marzano, Salento, Puglia. About 100 meters above sea level.
Ground:Shallow depth and medium-fine texture.
Cultivation:Espalier (4,000 vines per hectare).
Harvest:Second half of August.
Winemaking:Cold pre-maceration for 6-8 hours and subsequent alcoholic fermentation in French oak barriques.
Refinement:In French oak barriques for 3 months with periodic bâtonnage.
Organoleptic characteristics:Straw yellow color with golden reflections; the nose reveals surprising aromas of white flowers and vanilla; on the palate it is fresh and mineral with a good savory persistence.
Pairings:Seafood, shellfish and boiled fish with light sauces.
