Among the oldest Negramaro vineyards in Salento, we have long searched for grapes suitable for expressing the soul of this noble vine. We have chosen only three vineyards and F is the letter we used to indicate them. F of Feudi di San Marzano. Part of our history, this letter has become a quality mark for Negramaro, a symbol of our passion for this ancient and difficult grape.
Area:Contrada di Monte La Conca, between San Marzano (TA) and Francavilla Fontana (BR).
Ground:Residual red soil with fine texture with calcareous substrate, sparse rocky outcrops and intense presence of iron oxides.
Cultivation:Sapling (4,500 vines per hectare).
Harvest:Last week of September.
Winemaking:The grapes are harvested manually in small baskets. Maceration: 18 days on 80% of the mass, 25 days on 20%, with indigenous yeasts selected in the vineyard. Fermentation takes place at a controlled temperature of 24-26 °C.
Refinement:In French and Caucasian oak barriques for 12 months.
Organoleptic characteristics:Very deep and deep purple red colour; rich and complex aroma, with notes of spices, berries and cherry jam; wine with great body, soft and harmonious, rich in noble tannins, with a pleasantly persistent finish.
Pairings:Robust first courses, red meats, game, mature cheeses. Meditation wine.
