11 Rows Primitivo di Manduria Dolce Naturale DOCG 500ml

By tradition and habit we take care of the drying of 11 rows of Primitivo: where the sapling logs are welded to reddish soils with limestone veins; with the patience that the profession gives us, we dare to forge the sweetest nectar from these grapes, to distil a few, very few drops. Irreproducible wine, made without calculation, like everything torn from practical utility. To be enjoyed preferably according to inspiration, whenever "vagueness stings the pleasure".

Grape variety: Primitive.
Area: Very old vineyards selected in the municipalities of San Marzano (TA) and Sava (TA).
Ground: Residual red soil with fine texture with calcareous substrate, sparse rocky outcrops and intense presence of iron oxides.
Cultivation: Saplings at least sixty years old (5,000 per hectare).
Harvest: First days of October.
Winemaking: The grapes, after having dried on the vine, are harvested manually. Maceration takes place for 10 days with indigenous yeasts selected in the vineyard. Fermentation takes place at a controlled temperature of 24-26 °C.
Refinement: In French and American oak barriques for 12 months.
Organoleptic characteristics: Intense ruby ​​red color with garnet shades; persistent and complex aroma, with hints of overripe fruits reminiscent of cherry and dried fig jam, light spicy notes; the body pleasantly envelops the palate with honeyed sensations mitigated by the right acidity.
Pairings: Dry pastries made with almonds, fruit tarts, strong-flavoured and mature cheeses. Meditation wine.
Serve at: 18°C.
