The name contains the flavor of the essence and the peculiar characteristics of the territory from which it comes: the Puglia and Salento. On the estate Tormaresca this sensational is produced Red wine IGT Salento Fichimori, from the synergy of two exceptional vines. The Negroamaro and the Syrah which are expertly combined to give life to the estate's symbolic wine. The selection of the grapes takes place scrupulously by hand in the Tenuta Maìme di San Pietro Vernotico in province of Brindisi. The vinification first involves cold pre-fermentation maceration at around 5° C which lasts for 5 days. Walking allows the correct extraction of varietal aromas, color and softer polyphenolic components. This is then followed by racking and fermentation without skins at 18°C.
Characteristics of the Fichimori IGT wine from Cantina Tormaresca
The color of Fichimori wine is absolutely purple red, with broad, violet reflections. The scent of red fruit such as cherry, raspberry combined with floral hints of violet. The flavor is that of a soft and pleasant wine, with a light and mineral taste followed by a fruity and fresh finish.

The Fichimori wine from Tenuta Tormaresca is a wine of great versatility that is considered for the whole meal. Excellent with meats and cheeses but also with pasta first courses, rice and vegetable soups. It should be served at a maximum of 18°C, in a large glass which allows the aromas to be enhanced.
