Production area
Classic Bardolino. From hillside vineyards of morainic-glacial origin located in the municipalities of Lazise and Bardolino, east of Lake Garda.

Grape varieties
Corvina (55%), Rondinella (30%), Molinara (15%) vinified in rosé, i.e. with partial maceration of the solid parts.

Surrender
For every 100 kg of grapes, 70 liters of wine are produced.

Maturation
In stainless steel containers.

Refinement
About 3 months in bottle.

Organoleptic description
With a bright coral appearance and strong coppery reflections, it has a nose that gracefully expresses memories of aromatic herbs, oregano and marjoram, then fruity notes of raspberries, black cherries and pomegranates, up to persuasive mineral, almost marine sensations. The sip, harmonious and drinkable, reveals persuasiveness and softness, and then becomes more vibrant, enlivened by a freshness of raspberry, closing dynamically on long citrus-bitter sensations of chinotto.

Gastronomic pairings
Its ability to blend with the most varied dishes is very versatile: from appetizers based on oily fish and vegetables, to pasta dishes seasoned in red with white meat or tasty fish products; perfect with Caprese, Neapolitan pizza with anchovies, smoked carpaccio of both meat and fish and ham and melon. Priceless with paella and spicy Indian dishes, such as chicken curry.

Longevity
To be drunk preferably young (1-2 years).

Curiosity
After Bardolino Chiaretto has been treated for decades as a sort of "secondary" product compared to the red version, for some years now some producers have been working to produce Chiarettos with a more distinctive and stylistically focused profile. In particular, the "Rosé Revolution" of Chiaretto began with the 2014 vintage, which consists in offering wines with a very deep and bright pink color, more coppery than cherry, on the model of the rosés of Provence. Hand in hand with the chromatic changes, the taste-olfactory framework has also evolved, going from rustic-wine tones to a dense presence of small fruits: currants, morello cherries, cherries, blueberries, red apples, herbaceous touches and a spicy texture cinnamon, ginger, clove.
